1 lb ground pork
6 cups shredded cabbage or coleslaw mix
2 cloves minced garlic
2 tbsp minced ginger
2 tbsp soy sauce or coconut aminos
2 tbsp toasted sesame oil
1/4 cup chopped cilantro
1/4 cup chopped green onion
1. In a large skillet, heat sesame oil over medium heat. Add ginger and garlic and cook for 1-2 minutes by stirring often.
2. Add ground pork to skillet, separate and stir often until cooked through.
3. Add the coleslaw or cabbage mix to the skillet and combine with pork. Add soy sauce and continue to stir until cabbage mixture is cooked but slightly crunchy.
4. Remove from skillet and top with chopped cilantro and green onion. For extra nutrition, serve over cauliflower rice.
