Creamy Red Lentil Dal Recipe by Rebecca Hinson



1 cup dried red lentils

2 cups vegetable broth or water

2 cups coconut milk 

1/2 onion, diced

1 large carrot, diced 

1 tbsp ginger, minced (or 1.5 tsp ginger powder)

1 tbsp garlic, minced (or 1.5 tsp garlic powder)

2 tsp curry powder

1 tsp turmeric powder 

1 tsp coriander powder

1 tsp cumin powder

salt and pepper to taste

squeeze of lemon

Cilantro for garnish




1. Heat coconut oil on medium heat in a large pot. Add in garlic, ginger, onions, and carrots and sauté for 5 minutes. 

2. Stir in spices, vegetable broth, coconut milk and lentils. Bring to boil then lower down to a simmer. Cover and simmer for 20-25 minutes. 

3. Serve alone, over brown rice, or cauliflower rice.
